     Brewing Guide

    There is a no particular way in which you should or shouldn’t brew your tea. Brewing your tea is a matter of personal preference. Below and on our packages are merely suggestions for traditional gong fu style brewing, which is our method of choice. However, the beauty of brewing tea is changing parameters and experimenting with different variables to elucidate certain notes, flavors, and to find your ideal brew for a certain tea.
     

    Taiwanese Oolong

    • Heat up  water to 95° C water. (88° C for Bao Zhong).  Add 4-5 grams of tea per 100mL teapot / gaiwan.
    • Pour 95° C (88° C for Bao Zhong) water to open up tea leaves for a few seconds, then pour out water. 
    • First steep:        95° C (88° C for Bao Zhong) water for 1 minute.
    • Second steep:   95° C (88° C for Bao Zhong) water for 45 seconds.
    • Then each following steep add additional 5-10 seconds
    Our Taiwanese Oolong teas will last for multiple steeps/infusions. 

    Dan Cong Oolong

    • Heat up water up to 95° C water. Pour out water.
    • Add 5 grams of tea per 100 mL teapot / gaiwan.
    • Pour in 95° C water to open up tea leaves, immediately pour out water.
    • First steep:        95° C water for 3 seconds.
    • Second steep:   95° C water for 3 seconds.
    • Then each following steep add additional 5 seconds.
    Dan Cong Oolong teas are very delicate and can be easily overbrewed. All these teas last for multiple steeps.
